I’ve been remiss with posting the Sunday Night Cocktail (aka what’s in the liquor cabinet?), so I thought I’d rectify that right now. This is one we’d never heard of, but we had all the ingredients, so why not. Allow me to present the Mumsicle. I surfed around the web but didn’t find any tidbits of information on the Mumsicle, other than just recipes. So, who knows how this drink got its name.
Mumsicle
1 1/2 oz dark rum
1 1/2 oz bourbon
1 dash bitters
1 maraschino cherry
Stir rum, bourbon and bitters well with ice. Strain into pre-chilled cocktail glass. Garnish with maraschino cherry.
The night before the Mumsicle experience, Eric made a fabulous stirfry dinner and salads with ginger dressing. The wine was excellent as well, but I don’t recall what it was. I love the nights that we get to have dinner together. It’s such a treat.

On a completely unrelated note, my 5K training is going well and I am making great progress. I think I will be more than ready for the 5K next month. Also, my trainer is starting a new team to train for another 5K in October, and she asked me specifically to be a part of her new team. I’m excited about this and I think it will be good for me. I’m also taking advantage of the WW eTools for the first time. So far, so good. I like that it thinks for you! I won’t be able to weigh in this week due to them being closed on the 4th. So, hopefully I will see a big difference next week. AND I am making really good progress at school. I should be set to take my final for the class I’m in now next week and then I just have two classes left. I should definitely be able to get finished by the holidays (Thanksgiving), maybe even by the fall. That would be fantastic! I am so ready to be done with school and back to enjoying dinner with Eric on a regular basis.
Yummm…. that looks sooo… good.
